Special shout out to my girl Elizabeth for the DELICIOUS squash she brought me! Friday night, I quartered it up, gave each slice a little pat of organic butter and a sprinkle of cinnamon, then roasted in a glass baking dish at 400 degrees for 40 minutes. Oh. So. Delicious. Roy and I ate the entire thing. Thank you E!
BEWARE: LONG POST AHEAD!
SATURDAY
WORKOUT
Today's run was kind of a bummer. It was a Fartlek, which is supposed to be a fun run, in steady zone 2 with faster than 5K intervals whenever I felt like it for 1 hour and 10 minutes. I thought after not running for 4 days (because of the weather) I would be raring to go. Not so. I just figured maybe it was the 20 degree air. But according to Coach..."Not running in four days caused the Lactic acid to build in your body and tighten you up". Great. At least it wasn't in my head! Here's hoping tomorrow will be better!
MEALS
After my run I headed over to the Cozy Kitchen for a warm breakfast and COFFEE!
It's really hard to order breakfast right now since I'm not eating wheat or grains. So I went with the highest protein I could find!Three eggs and 2 pieces of sausage.
As you can see, I had already devoured one egg and half the sausage before I remembered to take a pic!
It is possible to eat Paleo when you go out. You just have to make smart choices. And bonus today...the waitress didn't look at me like I was crazy!
Lunch: 870 Bistro with Mom - so once again I had the salmon salad. I really could eat this salad every single day. It's delicious and it's the perfect balance of protein, veggies and good fats from the balsamic dressing and salsa! The only downfall is the garlic breath.
Snack: Huge handful of cashews
Dinner: Sean's Restaurant - had a delicious hamburger steak with a plain baked potato, grilled veggies and a salad. Hit the spot! Sean's really does have delicious food and it was easy to find something on the menu that was Paleo!
BABY SHOWER!
One of my best friends is having a baby! Elaine Hughes is expecting little baby Mahalin on March 6th (if she makes it that long). No one knows the sex of the baby - not even Elaine and Jeff! So it will be a big surprise to us all. We had so much fun at the party. I've never thrown a baby shower before, so this was all new territory for me. However, it was an honor to do it for Elaine. Her family is amazing and I can't wait to meet baby Mahalin!
Here are Elaine (center), Anna and I at the shower. Isn't she glowing??! She is such a great mom already...little Mahalin is gonna be one loved and super-blessed baby.
SUNDAY
WORKOUT
As the photo says, that's exactly what I did! Today was another Fartlek "make up" run from getting off schedule due to the ice. The purpose of this run was to have fun and enjoy "speed play" intervals. It was WAY more fun because Anna was with me on this one! And I guess Coach was right about the lactic acid, because I felt 100 times better this morning. Of course it could've been the perfect 30 degree temp, no wind, running with my BFF, the full moon, or a number of things. Haven't had a run this good in a while. I feel amazing!!
We covered 7.25 miles in 1 hour which made our average 8:30! Woo hoo!
CHURCH
Today Pastor Lewis continued his series on recovery. It was a very emotional service today. One of our members shared his testimony and his deliverance from addition. It was a blessing to be in church and witness the power of Christ's love and forgiveness.
MEALS
Breakfast: French Toast Omelette (made with egg whites, egg, banana, cinnamon & vanilla) OH SO GOOD.
Lunch: Letty's after church. I had the beef and veggie fajita (mushrooms, broccoli, cauliflower, onions, tomatoes, peppers)...no rice, no beans, no tortillas, NO CHIPS!!! I had enough fajita goodness leftover to throw in my eggs for two breakfasts!!! It was huge.
Snack: Handful of cashews & fresh pineapple chunks
Dinner: Crockpot chicken (apparently my new Sunday staple), roasted apples/sweet potatoes/walnuts (again, one of my faves that makes enough to have all week!), and a salad
MONDAY
WORKOUT
Today's workout marked the return of the BOSU! I finished the PRS Fit Runner's Stability Workout in 1 hour (which included 15 minute warmup on the spin bike). My legs were still toast from the weekend, so a total of 75 squats, 120 lunges and 3 minutes of wall sits really did them in. Tomorrow should be interesting!
DEVOTIONAL
As we enter the third week of Lent, I'm still finding strength in verses that help me discover new ways of thinking about food, comfort, and contentment. This verse from Psalms jumped out at me this morning:
Psalm 34:8
8 Taste and see that the Lord is good; blessed is the one who takes refuge in Him.
Instead of turning to food, we should taste the Lord. Go to Him in prayer. Ask for strength, courage, and the ability to avoid the temptation at hand. And according to the scripture, we will be blessed for doing that! The challenges we face will become more and more difficult as time goes on. The devil wants us to break down, give in, cave. He wants us to feel like failures, guilt-ridden and ashamed. Let's not allow the devil have his way. STAND UP. FIGHT. PRAY. And send the devil packing! You've got more important things to focus on today! :)
MEALS
Breakfast: 5 egg whites & 1 whole egg scrambled in coconut oil, mixed with leftover veggie & steak fajita (from lunch yesterday), and 1/2 cup blueberries
Lunch: 5 oz chicken breast, 1 cup steamed broccoli, 1/2 avocado with tomato & lime
Snack: Protein smoothie: Almond milk, banana, Sun Warrior Chocolate protein powder & cinnamon
Dinner: New Recipe! Sweet Potato Pizza....if it turns out good, I'll post the recipe tomorrow!!!
Hope everyone has a great day. Congratulations to all my running friends who ran at Disney and New Orleans this weekend!!!! So proud of you guys! Be blessed!
