TRUSTING THE PROCESS...& BACON!

Sometimes things move along a little slower than I would like. I tend to get impatient and I chalk that up to my Type "A" personality. Whether it's recovering from an injury or illness or losing weight, a lot of times things just doesn't happen quickly enough. So when I saw this little mantra, I had to share it! (I actually printed this out & put it on my fridge).
WORKOUT

Yesterday I got to walk at lunch AND after work! (it sure felt good to get these stiff legs moving!) It was too cold and windy to walk outside at lunch, so I decided to head over to the Athletic Club and jump on the treadmill for 2 miles. I listened to a Pandora Contemporary Christian station and enjoyed a little Jesus time. Great way to spend a lunch hour! Then after work I met Anna at Cooper Park and got in another 3.4 miles. Feeling good!

This morning I got to run with Laurie and got in a very slow 7 miles. My legs are still wondering what I did to them on Tuesday's run! But I'm so thankful to be running, that I guess pace shouldn't matter at this point. And we got in a good visit and beat the rain, so I was thankful for that too! I have to be patient now, settle in and realize it's going to take me a while to get back the level of fitness I had. I'VE GOT TO TRUST THE PROCESS.

DEVOTIONAL

You know, God is so good to me. I can't begin to explain how grateful I am. I am blessed beyond belief with an amazing husband, great friends, a wonderful church family and most of all good health. Yes, Roy and I have both had our fair share of injury and illness over the last couple of years, but it's nothing compared to what others go through.

I love it when someone asks Dave Ramsey how he is and he replies: "Better than I deserve!" That is so true.

I love these verses because they make me happy. I have to smile when I read them.

Psalm 92:1-5
1 It is good to give thanks to the LORD, to sing praises to the Most High.
2 It is good to proclaim your unfailing love in the morning, your faithfulness in the evening,
3 accompanied by the ten-stringed harp and the melody of the lyre.
4 You thrill me LORD with all you've done for me! I sing for joy because of what you have done.
5 O LORD, what great works you do! And how deep are your thoughts.

It's hard to give thanks and praise in the midst of our life storms. It's easy to be thankful and grateful when things are going good. The true test is when something bad happens that rocks our world or changes our lives. That's when I struggle, but I'm working on that. Satan is not going to steal my joy in any situation!

CHICKEN BACON WRAP RECIPE

2 organic boneless, skinless chicken breasts
1/2 package organic, grass fed, nitrate free bacon
(how much bacon you use, depends on how many
chicken breasts you fix)
2 tsp chili powder
8 tsp raw organic coconut sugar
salt & pepper
toothpicks

Preheat oven to 350 degrees.
Cut chicken breasts into bite size chunks.
Cut each slice of bacon into thirds and wrap
1/3 piece around chicken. Secure with toothpick.
Sprinkle with chili powder and coconut sugar,
salt & pepper to taste
Bake on a broiler pan for 30 minutes.

I ended up with 18 chicken pieces and used 6 slices of bacon. That made each chicken bite only 60 calories each!

SOAKED GREEK SALAD RECIPE

3/4 head iceberg lettuce (or lettuce of choice) - chopped
20 kalamata olives - chopped
13 large cherry tomatoes - halved
3 T olive oil
1 T white wine vinegar
1 T Raimondo Winery Sicilian Lemon vinegar (or you can 1 T lemon juice)
Salt, pepper, garlic powder, dried parsley, dried basil - all to taste

Mix lettuce, olives and tomatoes in large bowl. Wisk oil, vinegar, lemon & spices in small bowl. Pour over salad. Cover & refrigerate at least 1 hour so the salad "gets soaked". This maked about 4 cups of salad. Each cup is approximately 165 calories.

TODAY'S BREAKFAST SMOOTHIE - 450 calories

1 cup Almond Breeze
1/3 cup coconut milk (canned)
1 tsp cinnamon
2 tsp vanilla extract
1 medjool date (pitted)

So excited to go out to dinner tonight! It's a high calorie day for me, so I get to fully enjoy every single calorie!  Woohoo!
